Power up with these awesome cookies.
Take some outdoors and enjoy the day.
1 1/4 cup flour (I use a combination of white & wheat)
1/2 cup coconut
1/2 cup oatmeal
1 teaspoon baking soda
1/4 teaspoon cinnamon
3/4 cup light brown sugar
6 tablespoons unsalted butter at room temperature
1 very ripe banana
1/2 cup raisins
1/2 cup chopped walnuts
Cream brown sugar and butter with a spoon until fluffy. Add banana and egg; beat with a fork until blended. Stir in the dry ingredients (flour, coconut, oats, baking soda, salt, cinnamon). Stir in the raisins and walnuts.
This time I added a little bit of my homemade granola (ground in processor). YUM!
Bake 325 for 12-15 minutes.
